Chef John's Cherry Clafouti
A classic French dessert made with fresh cherries in a creamy custard.
Ingredients
- unsalted butter (0.5 teaspoon)
- milk (1.25 cups)
- white sugar (0.67 cup)
- all-purpose flour (0.5 cup)
- salt (1 pinch)
- eggs (3 large)
- vanilla extract (1 tablespoon)
- fresh cherries (12 ounces)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
- Place milk, 1/3 cup sugar, flour, and salt in a mixing bowl; whisk thoroughly to blend and break up any lumps. Whisk in eggs and vanilla until custard is well blended. Ladle about 1/2 custard into the prepared baking dish.
- Bake in the preheated oven until set, about 12 minutes. Remove from oven. Scatter cherries evenly on top of the set custard; sprinkle with remaining 1/3 cup sugar. Ladle in remaining 1/2 custard, trying to avoid rearranging cherries.
- Bake in the preheated oven until puffed and browned, about 45 minutes. Cool until just warm; serve warm.
