Chef John’s Buttermilk Biscuits

These biscuits are light, fluffy, and full of flavor, making them perfect for any meal or occasion.

Ingredients

  • all-purpose flour (2.25 cups)
  • baking powder (1.5 tsp)
  • baking soda (0.5 tsp)
  • salt (1 tsp)
  • unsalted butter (0.5 cups)
  • buttermilk (1 cups)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. Make a well in the center and pour in the buttermilk.
  5. Stir until just combined, being careful not to overmix.
  6. Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick.
  7. Fold the dough into thirds, then pat it down again and repeat this process 2 more times to create layers.
  8. Cut biscuits using a biscuit cutter or glass, and place them on a baking sheet lined with parchment paper.
  9. Brush the tops with a little extra buttermilk and bake in the preheated oven for 15-20 minutes until golden brown.
