Chef John’s Buttermilk Biscuits
Ingredients
- all-purpose flour (2.25 cups)
- baking powder (1.5 tsp)
- baking soda (0.5 tsp)
- salt (1 tsp)
- unsalted butter (0.5 cups)
- buttermilk (1 cups)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Make a well in the center and pour in the buttermilk.
- Stir until just combined, being careful not to overmix.
- Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick.
- Fold the dough into thirds, then pat it down again and repeat this process 2 more times to create layers.
- Cut biscuits using a biscuit cutter or glass, and place them on a baking sheet lined with parchment paper.
- Brush the tops with a little extra buttermilk and bake in the preheated oven for 15-20 minutes until golden brown.
