Cauliflower and Broccoli Salad with Honey Soy Dressing

Ingredients

  • orange juice (3 tablespoons)
  • tamari or soy sauce (2 tablespoons)
  • canola oil (2 tablespoons)
  • honey (1 tablespoon)
  • orange zest (1 teaspoon)
  • minced garlic (1 teaspoon)
  • toasted sesame oil (0.5 teaspoon)
  • salt (0.25 teaspoon)
  • crushed red pepper (0.25 teaspoon)
  • red cabbage (3 cups)
  • cauliflower florets (4 cups)
  • broccoli florets (4 cups)
  • sliced almonds (0.5 cup)

Instructions

  1. In a large bowl, whisk together juice, tamari, canola oil, honey, zest, garlic, sesame oil, salt, and crushed red pepper. Add red cabbage and cauliflower and/or broccoli; toss to coat.
  2. Let stand 30 minutes, stirring occasionally. Just before serving, top with almonds.
