Cauliflower and Broccoli Salad with Honey Soy Dressing
Ingredients
- orange juice (3 tablespoons)
- tamari or soy sauce (2 tablespoons)
- canola oil (2 tablespoons)
- honey (1 tablespoon)
- orange zest (1 teaspoon)
- minced garlic (1 teaspoon)
- toasted sesame oil (0.5 teaspoon)
- salt (0.25 teaspoon)
- crushed red pepper (0.25 teaspoon)
- red cabbage (3 cups)
- cauliflower florets (4 cups)
- broccoli florets (4 cups)
- sliced almonds (0.5 cup)
Instructions
- In a large bowl, whisk together juice, tamari, canola oil, honey, zest, garlic, sesame oil, salt, and crushed red pepper. Add red cabbage and cauliflower and/or broccoli; toss to coat.
- Let stand 30 minutes, stirring occasionally. Just before serving, top with almonds.
