Carrot Halwa

A traditional sweet pudding made by simmering carrots, milk, sugar, and cardamom until tender. Often served at weddings and during Eid and Diwali.

Ingredients

  • Carrots (500 grams)
  • Milk (1000 milliliters)
  • Sugar (200 grams)
  • Cardamom (5 grams)
  • Ghee (50 grams)
  • Nuts (50 grams)
  • Raisins (50 grams)

Instructions

  1. Heat ghee in a pan over medium heat.
  2. Add grated carrots and sauté until soft.
  3. Pour in milk and bring to a boil. Reduce heat and simmer until milk thickens and evaporates.
  4. Stir in sugar and cardamom, mixing well until combined.
  5. Cook until mixture is dry and reaches halwa-like consistency.
  6. Stir in nuts and raisins if desired, and cook for a few more minutes.
  7. Serve warm.
