Carrot Halwa
A traditional sweet pudding made by simmering carrots, milk, sugar, and cardamom until tender. Often served at weddings and during Eid and Diwali.
Ingredients
- Carrots (500 grams)
- Milk (1000 milliliters)
- Sugar (200 grams)
- Cardamom (5 grams)
- Ghee (50 grams)
- Nuts (50 grams)
- Raisins (50 grams)
Instructions
- Heat ghee in a pan over medium heat.
- Add grated carrots and sauté until soft.
- Pour in milk and bring to a boil. Reduce heat and simmer until milk thickens and evaporates.
- Stir in sugar and cardamom, mixing well until combined.
- Cook until mixture is dry and reaches halwa-like consistency.
- Stir in nuts and raisins if desired, and cook for a few more minutes.
- Serve warm.
