Candied Sweet Potatoes with Marshmallows
A delightful casserole of sweet potatoes topped with marshmallows, perfect for the holidays or family gatherings.
Ingredients
- sweet potatoes (5 large)
- sweetened condensed milk (0.5 (14 ounce) can)
- salted butter (0.5 cup)
- ground cinnamon (2 tablespoons)
- brown sugar (0.333 cup)
- miniature marshmallows (1.5 cups)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain.
- Place half of the sweet potatoes in a medium mixing bowl; mash. Stir in condensed milk, butter, and cinnamon. Add the remaining sweet potato cubes; sprinkle in all but 1 tablespoon of brown sugar. Stir gently to combine but ensure the brown sugar does not dissolve. Transfer the potato mixture to a 2-quart baking dish and top with marshmallows; sprinkle the remaining 1 tablespoon of brown sugar on top.
- Bake in the preheated oven until the marshmallows are golden brown, about 10 to 15 minutes.
