Caldo Verde (Portuguese Green Soup)
A delicious and comforting Portuguese green soup made with potatoes and kale, perfect for a hearty meal.
Ingredients
- olive oil (4 tablespoons)
- onion (1 medium)
- garlic (1 clove)
- potatoes (6 medium)
- cold water (2 quarts)
- linguiça sausage (6 ounces)
- kosher salt (2.5 teaspoons)
- ground black pepper (0 )
- kale (1 pound)
Instructions
- Heat 3 tablespoons of olive oil in a large saucepan over medium heat. Add the minced onion and garlic, and cook for 3 minutes. Add the sliced potatoes and cook, stirring constantly, for 3 minutes. Pour in the cold water and bring to a boil; boil gently until the potatoes are very tender, about 20 minutes.
- Meanwhile, cook the sliced linguiça sausage in a large skillet over medium-low heat until it has released most of its fat, about 10 minutes. Drain the fat from the sausage.
- Use an immersion blender to purée the potato mixture. Stir in the cooked sausage and season with kosher salt and ground black pepper. Increase the heat to medium, cover, and simmer for 5 minutes.
- Stir in the julienned kale and simmer until tender and bright green, about 5 minutes. Stir in the remaining 1 tablespoon of olive oil and serve immediately.
