Caldo de Pollo

A flavorful and filling chicken and vegetable soup, perfect for winter.

Ingredients

  • chicken legs or breasts (1 kg)
  • water (6 cups)
  • salt (1 tsp)
  • black pepper (1 tsp)
  • garlic powder (1 tsp)
  • minced garlic (2 cloves)
  • chicken bouillon (1 cube)
  • carrots (2 units)
  • cabbage (1 cup)
  • potatoes (2 units)
  • tortillas (2 units)
  • rice (1 cup)

Instructions

  1. Bring water, chicken, and seasonings to a boil.
  2. Lower the heat to a steady simmer. Cook until the meat falls off the bone.
  3. Stir in chicken bouillon and vegetables.
  4. Simmer until veggies are tender.
  5. Add more seasoning to taste if needed.
  6. Serve hot with tortillas and rice.
