Cacio-Oat Pepe

Ingredients

  • chicken stock (4 cup)
  • quick-cooking steel-cut Irish oats (2 cup)
  • freshly-cracked black pepper (1 pinch)
  • Pecorino-Romano cheese (1 cup)
  • salt (0 pinch)

Instructions

  1. Place a medium saucepan over medium-high heat.
  2. Add 4 cups of chicken stock (or water) and bring to a boil.
  3. Stir in 2 cups of quick-cooking steel-cut Irish oats and cook for 5 to 7 minutes.
  4. Stir in plenty of freshly-cracked black pepper.
  5. Add 1 cup of freshly grated Pecorino-Romano cheese and taste, adding salt if needed.
  6. Serve with more Pecorino-Romano on top.
