Cacio-Oat Pepe
Ingredients
- chicken stock (4 cup)
- quick-cooking steel-cut Irish oats (2 cup)
- freshly-cracked black pepper (1 pinch)
- Pecorino-Romano cheese (1 cup)
- salt (0 pinch)
Instructions
- Place a medium saucepan over medium-high heat.
- Add 4 cups of chicken stock (or water) and bring to a boil.
- Stir in 2 cups of quick-cooking steel-cut Irish oats and cook for 5 to 7 minutes.
- Stir in plenty of freshly-cracked black pepper.
- Add 1 cup of freshly grated Pecorino-Romano cheese and taste, adding salt if needed.
- Serve with more Pecorino-Romano on top.
