Best Ever Beef and Potatoes Casserole
A hearty casserole featuring layers of fried potatoes, ground beef, and cheese, baked to perfection.
Ingredients
- potatoes (6 large)
- vegetable oil (1 cup)
- olive oil (2 tablespoons)
- onion (1 )
- garlic (1 clove)
- ground beef (1 pound)
- condensed cream of chicken soup (2 (10.5 ounce) cans)
- shredded mild Cheddar cheese (1.5 cups)
- salt (1 )
- ground black pepper (1 )
- panko bread crumbs (1 cup)
- shredded Irish Cheddar cheese (0.67 cup)
- unsalted butter (2 tablespoons)
- cooking spray (1 )
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Slice potatoes into medium rounds. Heat vegetable oil in a deep skillet over medium heat. Add potato rounds in batches; fry until starting to turn brown, about 5 minutes per batch. Transfer to a paper towel-lined plate to drain; set aside.
- Heat olive oil in a skillet over medium-high heat. Add onion and garlic; cook until onion turns translucent, about 5 minutes. Add ground beef; cook and stir until browned and no longer pink, 5 to 7 minutes more. Drain grease from skillet.
- Combine beef mixture and soup in a large bowl. Add mild Cheddar cheese; stir until combined. Season with salt and black pepper.
- Combine panko bread crumbs, 1/3 Irish Cheddar cheese, and melted butter; set aside.
- Coat a 2-quart baking dish with cooking spray; spread 1/2 potatoes in the bottom of the dish. Sprinkle with 1/3 Irish Cheddar cheese; cover with 1/2 beef mixture. Repeat with remaining potatoes, Irish Cheddar, and beef mixture. Top with panko mixture.
- Bake, uncovered, in the preheated oven until browned and bubbly, about 30 minutes.
