Best Ever Beef and Potatoes Casserole

A hearty casserole featuring layers of fried potatoes, ground beef, and cheese, baked to perfection.

Ingredients

  • potatoes (6 large)
  • vegetable oil (1 cup)
  • olive oil (2 tablespoons)
  • onion (1 )
  • garlic (1 clove)
  • ground beef (1 pound)
  • condensed cream of chicken soup (2 (10.5 ounce) cans)
  • shredded mild Cheddar cheese (1.5 cups)
  • salt (1 )
  • ground black pepper (1 )
  • panko bread crumbs (1 cup)
  • shredded Irish Cheddar cheese (0.67 cup)
  • unsalted butter (2 tablespoons)
  • cooking spray (1 )

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Slice potatoes into medium rounds. Heat vegetable oil in a deep skillet over medium heat. Add potato rounds in batches; fry until starting to turn brown, about 5 minutes per batch. Transfer to a paper towel-lined plate to drain; set aside.
  3. Heat olive oil in a skillet over medium-high heat. Add onion and garlic; cook until onion turns translucent, about 5 minutes. Add ground beef; cook and stir until browned and no longer pink, 5 to 7 minutes more. Drain grease from skillet.
  4. Combine beef mixture and soup in a large bowl. Add mild Cheddar cheese; stir until combined. Season with salt and black pepper.
  5. Combine panko bread crumbs, 1/3 Irish Cheddar cheese, and melted butter; set aside.
  6. Coat a 2-quart baking dish with cooking spray; spread 1/2 potatoes in the bottom of the dish. Sprinkle with 1/3 Irish Cheddar cheese; cover with 1/2 beef mixture. Repeat with remaining potatoes, Irish Cheddar, and beef mixture. Top with panko mixture.
  7. Bake, uncovered, in the preheated oven until browned and bubbly, about 30 minutes.
