Banana Oat Muffins

Deliciously moist banana oat muffins sweetened with white sugar and perfect for breakfast or a snack.

Ingredients

  • unbleached all-purpose flour (1.5 cups)
  • rolled oats (1 cup)
  • white sugar (0.5 cup)
  • baking powder (2 teaspoons)
  • baking soda (1 teaspoon)
  • salt (0.5 teaspoon)
  • egg (1 )
  • milk (0.75 cup)
  • vegetable oil (0.33 cup)
  • vanilla extract (0.5 teaspoon)
  • mashed bananas (1 cup)

Instructions

  1. Gather all ingredients. Preheat the oven to 400 degrees F (205 degrees C). Line a 12-cup muffin tin with paper liners.
  2. Combine flour, oats, sugar, baking powder, baking soda, and salt in a medium bowl; set aside.
  3. Beat egg lightly in a large bowl. Whisk in milk, vegetable oil, and vanilla extract.
  4. Stir in mashed bananas.
  5. Add the flour mixture and stir until just combined.
  6. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  7. Bake in the preheated oven until tops spring back when lightly pressed, 18 to 20 minutes.
