Banana Blueberry Almond Flour Muffins
Ingredients
- almond meal (1 cup)
- ground flax seed (0.5 teaspoon)
- chia seeds (0.5 teaspoon)
- baking soda (0.25 teaspoon)
- eggs (2 large)
- honey (1 tablespoon)
- apple cider vinegar (0.5 teaspoon)
- ripe banana (0.5 )
- fresh blueberries (0.75 cup)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Line 4 muffin cups with paper liners.
- Mix almond meal, flax seed, chia seeds, and baking soda together in a medium bowl. Whisk eggs, honey, and vinegar together in a separate bowl. Stir almond meal mixture into the egg mixture until batter is just combined. Mash banana into the batter and fold in blueberries. Scoop batter into the prepared muffin cups.
- Bake in the preheated oven until slightly browned, about 15 minutes. Cool muffins in a pan for 30 minutes.
