Baja Style Chicken Bowl

Ingredients

  • olive oil (2 tsp)
  • diced cooked chicken (4 ounces)
  • frozen corn (0.5 cup)
  • red bell pepper (1 )
  • salt (0 )
  • ground black pepper (0 )
  • cooked brown rice (1 cup)
  • salsa (0.5 cup)
  • shredded Monterey Jack cheese (0.25 cup)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Cook and stir diced chicken, corn, and sliced bell pepper in hot oil until heated through and pepper is slightly softened, about 5 minutes. Season with salt and ground black pepper to taste.
  3. Spoon cooked brown rice into two bowls. Divide the chicken mixture between the bowls and top with salsa and shredded Monterey Jack cheese.
