Baja Style Chicken Bowl
Ingredients
- olive oil (2 tsp)
- diced cooked chicken (4 ounces)
- frozen corn (0.5 cup)
- red bell pepper (1 )

- ground black pepper (0 )
- cooked brown rice (1 cup)
- salsa (0.5 cup)
- shredded Monterey Jack cheese (0.25 cup)
Instructions
- Heat olive oil in a skillet over medium heat.
- Cook and stir diced chicken, corn, and sliced bell pepper in hot oil until heated through and pepper is slightly softened, about 5 minutes. Season with salt and ground black pepper to taste.
- Spoon cooked brown rice into two bowls. Divide the chicken mixture between the bowls and top with salsa and shredded Monterey Jack cheese.
