Asparagus and Red Pepper with Balsamic Vinegar

A quick and easy vegetable side dish featuring fresh asparagus and red bell pepper, enhanced with balsamic vinegar and Parmesan cheese.

Ingredients

  • unsalted butter (1 tablespoon)
  • olive oil (1 tablespoon)
  • fresh asparagus (0.5 bunch)
  • red onion (1 )
  • red bell pepper (1 )
  • salt (0 )
  • balsamic vinegar (1 tablespoon)
  • Parmesan cheese (0.25 cup)
  • sesame seeds (1 tablespoon)
  • toasted pine nuts (1 tablespoon)

Instructions

  1. Melt butter and oil in a large skillet over medium heat. Add asparagus, red onion, and salt. Cook until onion begins to soften, about 5 minutes. Stir pepper into mixture and continue cooking until onion caramelizes, another 5 minutes.
  2. Remove from heat and add vinegar, Parmesan cheese, sesame seeds, and pine nuts. Toss to combine.
