Armenian-Style Manti Dumplings
An incredible recipe for Armenian-style manti dumplings that can be filled with any ground meat or plant-based alternative and served with a delicious broth and yogurt sauce.
Ingredients
- all-purpose flour (1.67 cups)
- egg (1 large)
- olive oil (1.5 teaspoons)
- kosher salt (0.5 teaspoon)
- water (2 tablespoons)
- ground beef (0.5 pound)
- finely diced onion (0.25 cup)
- minced fresh parsley (2 tablespoons)
- smoked paprika (1 teaspoon)
- kosher salt (1 teaspoon)
- freshly ground black pepper (0.5 teaspoon)
- cayenne pepper (1 pinch)
- olive oil (1 tablespoon)
- crushed garlic (1 clove)
- tomato sauce (0.5 cup)
- chicken or beef broth (2 cups)

Instructions
- Combine 3/4 of the flour, egg, olive oil, salt, and water in a bowl. Mix with a fork until the ingredients just come together. Knead the dough until smooth. Cover and let it rest for 30 minutes.
- In another bowl, mix the ground beef, onion, parsley, smoked paprika, kosher salt, pepper, and cayenne. Cover and chill in the refrigerator.
- Preheat the oven to 400 degrees C (200 degrees F). Grease a cast-iron skillet with olive oil.
- Roll out half the dough into a large rectangle, cutting it into strips and then small rectangles (about 1.5 x 1.75 inches). Repeat with the second half of the dough.
- Place a teaspoon of filling in the middle of each rectangle. Moisten the edges and pinch them together to seal, creating the dumplings.
- Place the manti in the skillet, leaving some space between them.
- Bake in the oven for 40 minutes.
- Meanwhile, heat olive oil in a pot over medium-high heat and sauté the garlic until fragrant. Add the tomato sauce and broth, seasoning with salt, pepper, and cayenne.
- Bring the broth to a simmer and ladle it over the baked manti. Return to the oven for another 15 minutes.
