Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Delicious grilled chicken sandwiches with tropical mango and savory grilled veggies, topped with a zesty lime mayonnaise.

Instructions

  1. For the marinade: Combine cilantro, garlic, jalapeño, lime zest, salt, onion powder, black pepper, chipotle chile powder, and olive oil in a small bowl. Mix well. Place chicken in a resealable bag, pour marinade over, seal, and refrigerate for 1 hour.
  2. For the salsa: Mix tomato, sweet onion, cilantro, jalapeño, garlic, black pepper, sea salt, chipotle powder, and lime juice in a bowl. Cover and refrigerate.
  3. For the grilled vegetables: Toss onions and red pepper with olive oil, salt, and garlic; set aside.
  4. For the lime mayonnaise: Whisk together mayonnaise and lime juice; cover and refrigerate.
  5. Preheat an outdoor grill to medium-high heat.
  6. Grill the marinated chicken for 8-10 minutes until cooked through. Grill vegetables until tender and golden, about 8-10 minutes. Remove from grill, slice peppers into strips.
  7. Spread each slice of bread with lime mayonnaise. Layer half with mango slices, salsa, grilled chicken, grilled peppers, onions, and cheese. Top with remaining bread slices.
  8. Return sandwiches to grill, cooking until bread is toasted and cheese is melted, about 2 minutes per side.
