Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Instructions
- For the marinade: Combine cilantro, garlic, jalapeño, lime zest, salt, onion powder, black pepper, chipotle chile powder, and olive oil in a small bowl. Mix well. Place chicken in a resealable bag, pour marinade over, seal, and refrigerate for 1 hour.
- For the salsa: Mix tomato, sweet onion, cilantro, jalapeño, garlic, black pepper, sea salt, chipotle powder, and lime juice in a bowl. Cover and refrigerate.
- For the grilled vegetables: Toss onions and red pepper with olive oil, salt, and garlic; set aside.
- For the lime mayonnaise: Whisk together mayonnaise and lime juice; cover and refrigerate.
- Preheat an outdoor grill to medium-high heat.
- Grill the marinated chicken for 8-10 minutes until cooked through. Grill vegetables until tender and golden, about 8-10 minutes. Remove from grill, slice peppers into strips.
- Spread each slice of bread with lime mayonnaise. Layer half with mango slices, salsa, grilled chicken, grilled peppers, onions, and cheese. Top with remaining bread slices.
- Return sandwiches to grill, cooking until bread is toasted and cheese is melted, about 2 minutes per side.
