Almond Flour Paleo Pancakes

Delicious and fluffy pancakes made from almond flour, perfect for a paleo diet.

Ingredients

  • eggs (3 )
  • almond flour (1 cup)
  • tapioca flour (1 cup)
  • almond milk (0.5 cup)
  • vanilla extract (1 teaspoon)
  • baking soda (0.5 teaspoon)
  • baking powder (0.5 teaspoon)
  • salt (1 pinch)

Instructions

  1. Beat eggs in a bowl until smooth. Whisk in almond flour, tapioca flour, almond milk, vanilla extract, baking soda, baking powder, and salt until batter is just combined.
  2. Heat a lightly oiled griddle over medium-high heat or an electric frying pan according to manufacturer's instructions. Drop batter by large spoonfuls onto the griddle; cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
