4-Ingredient Pretzel Fish

A quick and easy weeknight meal featuring cod filets encrusted in pretzels and served with a honey Dijon sauce.

Ingredients

  • pretzels (1.5 cups)
  • honey (3 tablespoons)
  • Dijon mustard (0.5 cups)
  • cod filets (4 filets)
  • olive oil (1 tablespoon)
  • kosher salt (0.5 teaspoon)
  • black pepper (0.5 teaspoon)

Instructions

  1. Preheat oven to 400 F degrees. Place the pretzels in a plastic bag or food processor. Crush with a rolling pin or can, or pulse in food processor until almost finely crushed. Place aside in a shallow dish easy for coating.
  2. Combine 2 tablespoons honey and Dijon mustard in a bowl. Whisk to combine. Place 1/3 of the sauce in a second bowl, whisking in remaining tablespoon honey. Place second bowl aside for later.
  3. Place cod filets on a parchment lined sheet pan topped with a cooking rack. Brush each side with olive oil, and then season with salt and pepper.
  4. Use a silicone brush to coat both sides of cod filets with honey-Dijon sauce. Once coated, press each filet in pretzel crumbs to coat. Bake 15-20 minutes, depending on the thickness of the filets.
  5. Remove from oven. Cool 5 minutes. Drizzle with remaining honey-Dijon sauce. Serve warm immediately.
